For this reason, I was excited on Sunday night to get my ingredients together to make Slow-Cooked Pulled Pork.
- 1 medium white onion, chopped
- 1/2 cup ketchup
- 1/3 cup cider vinegar
- 1/4 cup packed brown sugar
- 1/4 cup tomato paste
- 2 tablespoons sweet paprika
- 2 tablespoons Worcestershire sauce
- 2 tablespoons horseradish brown mustard
- 1 1/2 teaspoons salt
- 1 1/4 teaspoons fresh crack black pepper
- 4.15 pound of bone-in pork butt (original recipe calls for 4 pounds of boneless pork butt)
My plan was to put all of the ingredients in the slow cooker on Monday morning but I like to prepare all of the ingredients the night before. I learned this little trick from my friend Lara, and I'm so grateful she shared this tip with me! So, I put all of the ingredients, except the pork butt, in a plastic container and let it refrigerate overnight.
Bret graciously broke the pork butt down into quarters and this was also refrigerated overnight.
On Monday morning, I put the pork butt in the slow cooker and poured the sauce mixture on top. I turned the pork butt around to let it coat evenly.
I covered the slow cooker and let it cook on low for about ten hours.
On Monday night, Bret moved the pork onto a cutting board. He removed the bone and pulled the pork.
While Bret was working on the pork, I covered the slow cooker and let the sauce heat on high until it was boiling, which thickened and reduced the sauce. We put the pork back into the sauce and let it cook on high until the pork was heated through.
We ate our slow-cooked pulled pork on toasted hamburger buns with pickles on Monday night.
Of course, we couldn't resist a side of Bret's sweet cornbread (which he made after work). I also insisted on adding a side of steamed vegetables to make the meal just a little bit healthy.
But the great thing about this dish is that it makes so much pulled pork! We are planning on eating the pulled pork as a filling for quesadillas and as a topping for homemade pizza later this week.
