Lemon-Oregano Grilled Chicken With Feta And Orzo


Everyday Food offers some of the best recipes for those looking to throw together a quick but flavorful dinner. I'd turn to it over Every Day with Rachael Ray any day!

When I was flipping through the June issue, I dog-eared this particular recipe because I love orzo. And I decided to make it because I knew I could easily add my own touches -- like feta crumbles and asparagus coins.


Lemon-Oregano Grilled Chicken With Feta And Orzo (adapted from Everyday Food, June 2010)
Serves 4 (or 2 with leftovers for the next night)

Ingredients

4 chicken cutlets (about 1 pound total)
2 garlic cloves, smashed and peeled
2 sprigs plus 4 teaspoons chopped fresh oregano
1/2 lemon, quartered, plus 1 tablespoon lemon juice, plus wedges for serving
Coarse salt and ground pepper
3 tablespoons extra-virgin olive oil
1 bunch asparagus
1 cup orzo
1/4 cup toasted hazelnuts, chopped
3 ounces crumbled feta


Preparation

In a large bowl, combine chicken, garlic, oregano springs, and two teaspoons chopped oregano. Add lemon quarters, squeezing juices into the bowl. Season with salt and pepper. Cover with plastic wrap and refrigerate 30 minutes.


While chicken is marinating, prepare the asparagus. If you have a mandoline, use it to make asparagus coins, which look really fancy but are so simple. Hold a handful of asparagus stalks at a time, and pull them across the mandoline blade to produce small circles or coins. Otherwise, just chop the asparagus into small pieces. And chop the tips into small pieces because you won't be able use the mandoline on those.


Heat 1 tablespoon of oil in a large skillet. Add the asparagus coins to the pan, and season with salt and pepper. Saute over medium heat just until the asparagus is softened (or cook to the consistency you like). Set aside.


Put a pot of salted water on to boil for the orzo.

Heat 1 tablespoon of oil in a grill pan over medium-high heat. Remove chicken from marinade, and grill about 3 to 4 minutes per side, depending on thickness of cutlets. Transfer to a platter, and keep warm.


Once water comes to a boil, cook orzo according to package directions. Drain and stir into asparagus coins. Mix in 2 teaspoons chopped oregano, 1 tablespoon olive oil, and 1 tablespoon lemon juice. Season to taste with salt and pepper.


Place a chicken cutlet and a large spoonful of the orzo mixture on each plate. Top orzo with toasted hazelnuts and crumbled feta.


This goes down as one of my favorite quick dinners. The fresh oregano and lemon add bold, bright flavor to something as simple as grilled chicken. And orzo is a nice change from something like rice or potatoes, especially when it's dolled up with asparagus coins, feta, and toasted hazelnuts. The dish is also pretty versatile. Sliced or slivered toasted almonds would be very tasty if you wanted to swap out the hazelnuts. And you could always mix the orzo with the old standbys: broccoli and cheddar. I like it just the way we had it.



Quick tip for washing herbs: Submerge them in a small bowl of cool water, and swish them around a little. The dirt should come off and sink to the bottom of the bowl. Remove the herbs and dry them with a paper towel.

Boston's First Annual Food Truck Festival

On Sunday, Boston had its first annual food truck festival at SOWA Open Market.  This event was organized by Citysearch Boston and I was incredibly excited to check it out.  There is a huge movement for food trucks throughout the country and Boston seems to slowly be catching on.  I think this event is a great way for existing food trucks to demonstrate their presence in our city.

Bret and I knew that there were going to be some huge crowds so we were one of the first to arrive at about 9:45 AM.


Some of the food trucks had not yet arrived and others were still setting up.


We were both starving for breakfast so we decided to have the breakfast of champions - Speed's Hot Dogs


Bret and I have both been wanting to try Speed's for quite some time so we decided to split one of their hot dogs.  We got one of their enormous all beef hot dogs covered with barbecue sauce, mustard, onions, and house relish on a toasted bun.  These things were huge and half of one hot dog was the size of your average grocery store hot dog!


Wow, Speed's lives up to its reputation and we were glad to have tried it before the lines got ridiculous later in the day.


After such a crazy breakfast, we decided to browse around.  I got to meet Cyndi of the Best Damn Granola


We tried a few different varieties but ended up purchasing the "Mac Daddy", which contains organic apples, cranberries, walnuts and 100% pure maple syrup spiced with crystallized ginger.  I love that BDG uses local ingredients and I can't wait to have some of this granola for breakfast with my cottage cheese!


We wandered around the SOWA Open Market and Bret purchased a really cool refurbished cigar box.


Then we headed back to the food trucks so that Bret could indulge in some ribs from Big Moe's M&M Ribs.  


After Bret purchased his ribs, we heard my name being called and were happy to find that it was Lara (of Good Cook Doris) and her hubby!  They had purchased a sandwich from Big Moe's and we all sat together to eat and chat.  I actually didn't taste any of the ribs as I was still pretty stuffed from my Speed's Dog.  Bret chowed down and his verdict was that the ribs were good but not great.  It was slathered in sauce but didn't have that nice barbecue crispy texture on the outside.


After eating, Lara and I headed over to Food Truck Nation, where we spoke to Todd, one of its proprietors.  Neither Lara nor I had heard about Food Truck Nation and we were both very curious.  I found that this is a fantastic business that is working to not only open up their own food trucks but to also assist restaurants to operate their own.  It is an interesting concept and I think they will be a huge part of the food truck movement in the city!  Rachel Klein of the Boston Seaport Hotel was still setting up when we chatted with Todd but during the meantime, Food Truck Nation was giving out free cones of caramel and chili popcorn.  These were seriously addictive!


Afterwards, Lara and I parted ways to wander around on our own.  I finally got to meet the bubbly Lauren from Pestos with Panache and her wonderful parents! I sampled quite a few of the interesting pesto combinations and ended up purchasing two kinds - Fabulous Fig and Gorgonzola and the Pumpkin Chipotle.  You guys know me - I can't resist anything pumpkin!  I failed to get a picture of her booth but I did get a great photo of my favorite pickles - Grillo's Pickle Cart!


Bret and I walked around with them a bit as we browsed the vintage market at SOWA but with the heat, Lauren's parents graciously let us store the pesto in their coolers until we were leaving.  This was especially a good idea since we ended up in a very long line for Fillbelly's, which arrived late to the festival. 


The line was brutal but I really wanted to try them out since I had heard such great things about them.  Luckily, I got to pass the time with Rob and Laura of the Two Palaverers who were right behind me in line!  Eventually Rob and Laura gave up on the line but Bret and I soldiered on.  When Cupcakory showed up, Bret went to their line and brought back two complimentary mini cupcakes - one was a coconut mix and the other was a raspberry pistachio.  These tasty little treats were welcome relief in the hour-long line.


Finally we put in our order and one for my friend Justin and his wife Leah.  Once the order was in, our food was prepared quickly.  Bret and I decided to split the fried chicken (they ran out of waffles), a chicken bosilito (home-style empanada) and their mac and soul casserole (mac and cheese with shredded sweet potato and collard greens. 


Was it worth the wait?  I'd have to say no.  Don't get me wrong - the food was good but in my mind, very few things are worth an hour plus long wait.  The chicken was crispy on the outside and moist on the inside but lacked a lot of seasoning, especially salt.  The  bosilito was absolutely delightful and I would definitely order it again.  I liked the mac and soul casserole but it was a bit on the cold side. 

I'm sure a lot of people will complain about the lines at the Food Truck Festival but I'd call it a success for the inaugural event.  There were over a thousand people there and less than a dozen food trucks.  Hopefully next year we'll have more trucks that are better prepared, which will definitely help the situation.  For me, I was happy to get my street food fill and couldn't think of a better way to spend a Sunday.

The Best Thing I Ate All Weekend

It has been a jam-packed weekend for me.  I started it out Friday night with a tough workout at the gym and then treated myself to Hot Tomatoes takeout and a bottle of Sauvignon Blanc.  I planted myself on the couch and watched three episodes of the Pillars of the Earth, which was one of my favorite books from A.P. British Literature.

On Saturday Bret and I attended another fantastic cooking class and dim sum at Myers + Chang.  We spent the rest of Saturday down in Easton with his parents and we finally got to try out LOCO, a fantastic Spanish tapas and wine bar.  When we got back to Boston, we met up with my friend Teresa for a few drinks at the Hill Tavern, a local neighborhood bar.

Today was filled with lots of food and shopping at SOWA Open Market and the Boston's 1st Food Truck Festival.  I got to spend time with a few different food blogger and social media pals while waiting in some long lines!

I don't usually post blogs on Sunday but there was so much great stuff going on this weekend and I know that I will be writing more about a few of these things in detail this week.  But for now, as a teaser, I'll have to say that despite all of the great food I had this weekend, one dish stands out as the best thing I ate all weekend...

Might As Well Jump

I woke up so early on Saturday that I ended up eating two breakfasts. The first was my go to cereal, a bowl of Cheerios with a sliced banana. Even though the blog never sees em, I assure you Cheerios are a staple in my pantry.
Complete with a decent pour of 2% milk.
I was up at the crack of dawn. Which for me, on a Saturday, means about 8:00. From that fact you can gather what my Friday night consisted of: nothing. Not necessarily a bad thing. Well, I did eat a lovely tomato mozzarella plate for dinner, drank some chilled white wine and had a vanilla milkshake with chocolate sauce for dessert! The rest of my Saturday morning, besides a few miscellaneous organizings here and there consisted of a whole lot more of nothing! Nothing but laziness on the couch watching SYTYCD (I want Lauren to win!) and GH. When 11:30 rolled around I decided I was going to get my lazy self to the gym. I needed fuel, and since it was technically still morning, I whipped up some fancy scrambled eggs. Two eggs with mozzarella & cheddar cheese, tomatoes, mushrooms & onions. This hit the spot and further enhanced my gym motivation.
After my workout I walked home through Faneuil Hall where a FoodShouldTasteGood rep was handing out free samples of Multigrain Torialla chips and Tribe hummus. Score!I love these chips and the hummus was delish!
It was a gorgeous day, so after a few errands I plopped down in the park to relax. I hang out here a lot!
Don't get all excited, I wasn't shopping for myself. Inside the Banana Republic bag is a birthday gift for Adam's Mom. I'm still feeling the blow from my Anthropologie purchases a couple weeks ago.Warm temps and a cool breeze made for a relaxing afternoon. Blue skies filled with fluffy clouds made for some pretty pictures. Later on Adam and I enjoyed some beers on the roof deck. I didn't bring my camera up, but as you can imagine, the evening was just as gorgeous as the afternoon was. We drank the rest of my Hoegaarden 6-pack. and then switched to Bud Light.
When we came downstairs we listened to the jams on TV and played cards.ew.So what I'm saying is we had a party, just the two of us. Above: Madonna - "Like a Prayer" and The Miami Sound Machine / Gloria Estefan - "Bad Boys."

Needless to say it was a fun night! And I'm not even hungover today. Beer, Beer, in the clear. Or something.
