As part of the Foodbuzz Tastemaker Program, I received two complimentary jars of Pace Picante Sauce for me to experiment in the kitchen. And as soon as they arrived, I knew exactly which recipe I wanted to try: carnitas. Carnitas mean "little meats" in Spanish and is traditionally made with beautifully marbled and muscled cuts of pork, which are tenderized over hours of low heat into sublime perfection. This is slow-food at its best.

CHAI TEA BRINED PORK CHOPS
I'm trying to get back into the swing of things at home, one or both of us have been traveling nearly every week since August. Whenever this happens, the supply of perishables thins out from the refrigerator. If I'm flying solo, I opt to eat out, or worse yet, eat out of a bag. Shhh! Don't tell anybody! The blogger who extols the virtues of eating fresh, also eats out of a bag!

SEVEN SPICE CARNITAS RECIPE
When I think of slow-food, I think of braised meats. Beautifully marbled and muscled cuts of meat tenderized over hours of low heat to sublime perfection. My favorite version of braised meat is carnitas, pork shoulder that is slowly simmered in an exotic array of spices. It is simply divine.
