On Sunday, I was invited by the folks at
I Can't Believe It's Not Butter! to attend a farmers market event to learn more about their products and how to use it with seasonal fruits and vegetables.
We first met at the Charles Square Farmers' Market.
Chef Susannah Locketti walked us through the farmers market to pick up some different ingredients for our cooking class.
I shop frequently at farmers' markets so I was happy to browse around and snap some photos. I took a LOT of photos!
Afterwards, we all headed to the
Cambridge Center for Adult Education to put these ingredients to use. We made three compote butters that would be used in our dishes - a sweet butter, an Italian butter, and a curry butter. We split up into three teams and I was happy to be working with Jen (from
Beantown Baker), Jen's husband Carlos, and Megan (of
Delicious Dishings). We were responsible for the curry butter which consisted of several cups of I Can't Believe It's Not Butter, curry powder, smoked paprika, chopped scallions, lime zest and chopped raisins.
Using the butter, we worked with some fabulous ingredients...

Carlos was the MVP of our team. He washed, chopped, and got his hands dirty. I was seriously impressed! |
|
Eggplants marinated in the curry butter with black pepper ready for roasting. |
|
Chopped rainbow chard. |
|
Sliced heirloom tomatoes with salt and pepper. |
And ended up with some fabulous dishes....
|
Open faced sandwiches with roasted eggplant, sliced tomato, and melted gouda cheese. |
|
Caramelized butternut squash. |
|
Roasted Brussels sprouts, red onions, zebra tomatoes and celery root. |
It was really great to learn more about I Can't Believe It's Not Butter! and how to use it in your kitchen. I tend to use real butter in my kitchen but I do like using the I Can't Believe It's Not Butter! spray for my steamed vegetables because it is so easy to use. They gave us some coupons so I'll probably try out some of their other products soon.
Thanks to the folks at I Can't Believe It's Not Butter! for such a wonderful morning and special thanks to Jaclyn Kolber and Susannah Locketti for a great day!
